My freezer is packed full of boneless, skinless chicken breasts and packages of boneless pork chops. One of my favorite ways to make chicken is into a paillard so why not pork paillard? See my previous recipe for Mexican Chicken Paillard. Pounding out the pork thin, quickly sautéing in olive oil ensures the pork is tender and full of flavor.

Pork Loin Paillards. Take a large piece plastic wrap (the length of the cutting board) and lay it on a clean cutting board. Place 1 piece of the pork, place 2-3 inches away from the edge of the plastic closest to you. Fold the far edge of the plastic wrap towards you, so the pork is enclosed, leaving a 2" space around the meat.

Sprinkle the pork with the seasoning mixture. Pour the oil on a plate, and dip both sides of the paillards in the oil. Cook immediately, or stack the pieces of pork together on the plate, cover them with plastic wrap, and refrigerate them for up to 8 hours. When ready to cook, heat a clean grill until very hot.

Cook the pork until golden, about 2 to 3 minutes and flip it. Step 9. Continue cooking on the other side until golden and almost cooked through, about 2 to 3 minutes longer. Step 10. When oil ripples, cook 2 cutlets or paillards at a time, drain on rack. Repeat with remaining cutlets. Wipe out pan and dispose of oil. Return to heat over medium-low for warm salad. For the warm salad, heat EVOO in large skillet over medium-low, add garlic and swirl a minute, then add Dijon, honey, and vinegar and combine with whisk.
